Wahoo

     Acanthocybium Solanderi or Wahoo is one of the fastest fish in the ocean, traveling at speeds of up to 60 miles per hour. The Wahoo's long slender body makes it very aerodynamic and helps it move quickly though the water. Wahoo is also known as the "Zebra Fish" due to the zebra like stripes on its sides. Wahoo are very large fish averaging about ten to fifty pounds. The largest Wahoo ever caught weighed a whopping 158 pounds and 8 ounces. 
     Wahoo is a very rewarding fish to catch but it is not an easy task. Trolling is almost the only way to catch a Wahoo. When trolling though you cannot see the Wahoo so you have to wait until you get lucky. Trolling with a dead Ballyhoo, which is a type of bait-fish, will usually get the job done. When a Wahoo bites it will do one of two things: It will take the bait with one big hit, or it will hit your bait hard but will only take half. If you see your rod take a hard dip and then let up the Wahoo has most likely take half of your bait. Do not curse your luck though, Wahoo rarely leave without taking the rest of their meal. Let out some line and wait for the Wahoo to circle back around.
     Rarely will you ever catch a Wahoo close to the beach. Having a boat is very necessary for catching Wahoo due to the distance you must travel to catch them. Wahoo are found in temperate waters ranging from 68 degrees to 78 degrees. The months of May thru September are known as the "Hot Bite" months to Wahoo fishermen, due to the amounts of Wahoo you can catch during these months.
     Wahoo is known around the world for its great taste. People who do not enjoy fish are known to take a liking to Wahoo. Here is a recipe courtesy of "Ezine Articles"

Ingredients
4 wahoo steaks
1 tablespoon olive oil
1/2 tablespoon lime juice
1 tablespoon lemon juice
1 tablespoon paprika
1 teaspoon crushed red pepper

Directions
Whisk together olive oil, lime and lemon juice, paprika, and red pepper in a small bowl. Place wahoo in a dish. Pour the marinade mix over the fish, place in refrigerator, and let stand for half an hour. Remove wahoo steaks from fridge, remove from pan, and grill directly over charcoal for 15 minutes, turning once during that time. You can use the leftover marinade mix to baste the fish while it is grilling.
